Roasted Cauliflower with Lemon Caper Vinaigrette from the January/February 2017 Cooking Light. It is hard to go wrong with roasted cauliflower! This is very good, we give it a 4. Served with a reprise of the Slow Cooker Chicken Congee from the same issue.

Slow Cooker Chicken Congee from the January 2017 Cooking Light. I have long heard of congee, a type of rice porridge popular in China, but never had the chance to make it before. It is a wonderful comforting food, and the addition of some greens, scallions, avocado and chili oil really jazzed it up. This gets a 5.

Spicy Lamb and Lentils with Herbs from the March 2015 Bon Appetít. Nice flavors, we give this a 4. The cooking technique for the lamb seemed odd--cooking a patty til crispy, then breaking it up--and likely to dry the meat, so we just sautéed the ground lamb with the spices. It worked out well.

Green Curry Pork Tenderloin from the December 2016/January 2017 Bon Appetít. We wondered why this recipe has so much oil added to the curry. We learned it mellows the spiciness of the curry as well as giving a creamy texture. The idea of browning the tenderloin and then finishing it in the oven at 250 F also seemed unusual, bug it produces a beautiful moist piece of pork. This gets a 5!

Green Salad with Pears Pecans and Blue Cheese from the January 4, 2017 Denver Post. The components of this salad are familiar, but it uses toasted pecans instead of candied, and had a hint of maple syrup in the dressing--a lighter, brighter version. We give this a 5.
