
Beet and Lentil Salad with Cheddar from NYT Cooking. We had beets in the garden, so we had to use them! Like any good salad, this has a very nice vinaigrette, but what really makes it good is the complementary flavors that makes the beets shine, including arugula, sharp cheddar and toasted hazelnut. Yum! This gets a 4.
