White Bean Caprese Salad from NYT Cooking. This is a very easy salad, but it has great ingredients and is a great riff on the classic Caprese Salad. We give this a 5.

We celebrated Tet a bit late with these three dishes from NYT Cooking: Pressure Cooker Vietnamese Caramel Pork and Eggs, Dua Gia (Pickled Bean Sprout Salad), and Smoky Stir Fried Greens. The pork is fabulous and gets a 5. The salad and greens are also very good, and both get a 4.

Braised Chili Marmalade Duck Legs with Brussels Sprouts from Epicurious. You do need to allow enough time for this to finish (it takes at least 2 1/2 hours), so not a quick weeknight dinner, but well worth the effort! We loved this, it gets a 5.

Chicken Tikka Masala Soup from the Denver Post 2/10/2021. This is a nice soup. A number of different spices, though we wonder if there should have been a bit more of each. We give this a 3.

Caramelized Plantains with Beans Scallions and Lemon from NYT Cooking. This dish has a nice combination of flavors. It may be that I did not roast the plantains long enough to get them really soft, but by the time they finished broiling in the second part they were pretty tough. We give this a 3 as cooked, but might try it again with longer roasting for the plantains.

Escarole Cannellini Bean and Sausage Soup from the January/February 2021 Eating Well. This seems like a variation on Italian Wedding Soup, and it is very satisfying. Especially fun to have « croutons » made from a frittata. We give this a 5.

Chakalaka and Cheddar Braaibroodjies (Grilled Cheese Sandwiches) from Epicurious. Rather than make the chakalaka, we use a Hyderabad chutney we have made. This is a fun way to dress up grilled cheese—we give this a 4.

Instant Pot Beef Pot Roast from the September 2018 Eating Well. We have definitely enjoyed the speed of cooking offered by an Instant Pot. This has good pot roast flavors, though it needed more time than the recipe called for to get meltingly tender meat. We give this a 3.

Instant Pot Mujadara from the January/February 2021 Eating Well. This is a deceptively simple recipe, but really rich flavors. We love it! It gets a 5 One thing to keep in mind is that it is harder to adjust the heat in these pots to caramelize onions without carbonizing them. It may make more sense to do the onions on the stovetop.
