Chicken Noodle Soup for One from NYT Cooking. This comes together very quickly. It seemed a little under salted, but I did use a low salt broth—would salt it a bit more in the future. Pleasant dish, it gets a 3.

Instant Pot Pork with Red Wine and Olives from NYT Cooking. This is a really nicely flavored stew which we thoroughly enjoyed. Of note, the leftovers seemed a bit salty, probably because the olives sat in it overnight—they are added just as the stew finishes. We give this a 4.

Two from the February 9, 2022 Denver Post: Individual Beef Wellingtons, and No Churn Olive Oil Ice Cream with Hot Fudge. The Wellingtons are delicious! The ice cream is quite good, but took me a bit of time to warm up to. It looks like vanilla ice cream but is salted and has the olive oil. When you combine it with the fudge sauce it is like a salted chocolate ice cream sundae—quite good after getting over my preconceptions. We give the beef a 5 and the ice cream a 4.
