Instant Pot Beef Ragu with Pappardelle from Food and Wine. We misread 1 canned chipotle Chile as 1 can of chipotle Chile. So while flavorful this was very picante. As made, it gets a 3, but we will try this again, it seems like it will be excellent!

Smashed Roasted Carrots from NYT Cooking. Sounds simple, but the sauce with black rice vinegar, soy sauce, sesame oil, garlic and ginger really elevates it, and then it gets topped with peanuts and Chile crisp. This dish gets a 5.

Chicory Bacon and Poached Egg Salad from Epicurious. Utterly delicious, we give this a 5. Wonderful bitterness from the green, acidity and sweetness from the dressing, umami and salt from the bacon, roasted mushrooms and Parmesan and unctuous creaminess from the poached eggs. Culinary heaven!

One Bowl Ricotta Olive Oil Poundcake from Epicurious. Olive oil, ricotta, and yogurt! Very moist and flavorful. The crust was pretty crunchy—May have over cooked it a bit, but was trying to be sure the center was done. We give this a 4.

Fennel and Celery Root Salad from Epicurious. A nice combination of flavors. Our radicchio was not a small one, and so I think dominated the salad a bit more with its bitterness than was intended. So this gets a 3, but might have been a 4 with a bit less.

Sheet Pan Sausage and Squash from NYT Cooking. With the sheet pan, the squash picks up some of the rendered fat from the sausage, giving it a great flavor. But the sausage came out fairly dry for some reason. Overall, this gets a 3.

Today's new recipe is the Simplest Kale Salad from Epicurious. It really is simple, and has really good flavors—the honey balances the lemon juice beautifully, and the Parmesan is a nice counterpoint to the dressing. We give this a 4.

Black Eyed Peas from NYT Cooking. This uses a charred onion , gloves, a lot of garlic, bay leaves and a small chili, so we expected a rich melange of flavors, but they were pretty muted. We give this a 3

Sheet Pan Ratatouille with Goat Cheese and Olives from NYT Cooking. I followed the recipe, I would say the vegetables were closer to carbonized than caramelized. Wonder if this is because I only made half the recipe, or because it was a convection oven. We enjoyed the flavors, but would definitely watch more carefully the next time to keep it to caramelized. As made, we give it a 3, but it would be at least a 4.
