New recipe, September 20, 2015

Saag Paneer from the September 16, 2015 Denver Post. Served with tomatoes and naan.

We saw mustard fields everywhere in India, but it was never clear how mustard oil is used in Indian cooking, so I was immediately drawn to this recipe, which uses mustard oil. The flavor to me is the concentrated essence of mustard greens, and it does punch up this dish nicely! Just be sure to add salt! We give this a 4.

The article says you can get paneer and mustard oil at Whole Foods--sadly not at mine. I found both at Sathvik Foods, 2720 S Havana.

Feta Quinoa Omelet from the September 2015 Food and Wine. This is pleasant, it gets a 3. Served with a riff on the Grilled Peach Salad from the August 5, 2015 Denver Post. This time I used the peaches without grilling. I used a mix of white cheddar and Queso Campesino, and I used pecans instead of hazelnuts. And I added smoked sweet paprika to the dressing which really took it up a notch. Made this way, we give it a 4.

Fresh Mango Ice Pops from the July 15, 2015 Denver Post. All fruit--very tasty! We felt they could use a little something more to really make the mango flavor stand out--maybe a touch more citrus juice. We give these a 4.

This week we are on an ice pop theme, thanks to an article in the July 15, 2015 Denver Post. Today's is Ruby Grapefruit and Campari Ice Pops. Excellent, they get a 5 for flavor! They never quite freeze hard, retaining a slight slushiness, which makes it a bit difficult to get them out of the mold--we wonder if this might be from the small amount of alcohol from the Campari.

Pan Roasted Radishes with Butter, Lemon and Tarragon (it is several recipe down the linked page) from the Denver Post. The flavors were great, but the radishes were a bit woody--we give it a 4 as made, likely would be a 5 with tender radishes.

Served with pork tenderloin with a fennel orange rub, and fresh grilled ramps with olive oil, salt and pepper. The ramps have an amazing flavor, especially when grilled, very reminiscent of truffles. A) we get why professional chefs are so enamored of ramps. B) these get a 5!

Wine: Nicolas Potel Beaune 1er Cru Clos des Vignes Franches 2006--an excellent match

Chicken Cutlets with Mushrooms and Pearl Onions from the March 2014 Cooking Light--flavorful, we give this a 4. Served with Warm Asparagus with Poached Egg and Porcini Vinaigrette from the Denver Post (we left the poached egg off). The vinaigrette is really interesting, makes this a 4 as well.

Wine: Jean Paul & Benôit Droin Chablis 2010 -- a nice wine, and a reasonable match to the dishes

We had several holiday parties today, so the new recipe is the Oaxacan Winter Cocktail, from the Denver Post. There are nice layers of flavors here, but you have to like mescal. We give it a 3.
