This evening, we had a quick repast so we could drive to Winter Park for a weekend of skiing. This is Rick Bayless' Sun Dried Tomato Guacamole, from Fiesta at Rick's. That's feta you see on top. This was a wonderful quick meal! Since we were driving, there was no wine with this one.
