Two from the July 2018 Cooking Light: Shrimp Kebabs with Mint and Melon Salad, and Herb Scented Rice Salad. Both are pretty quick and tasty. The shrimp gets a 3– we would have liked a spicier shrimp with the melon. The rice is both subtle and delicious—we give it a 4.
