New recipe, April 29, 2011

5 more days til Carl gets home!

I cheated slightly today. I cooked some Monterey Bay Pasta Company Portabella Mushroom Ravioli, but the new recipe was a Red Onion and Black Olive Sauce from Sally Griffiths' book Great Pasta Sauces. It was delicious!

The wine was a 2004 Vale do Bomfim Douro Reserva. It has enough fruitiness to match the sweetness of the onions and balsamic, and still matched the olive and salt in the sauce. A very nice match!

6 more days til Carl gets home!

I am on the mend, but still decided to go for a fairly simple meal. So I made Indonesian Chicken, originally from the Cooking Light Magazine, with buttered stillette pasta. The chicken has a very nice flavor.

The wine was Le Vigne di San Pietro Corderosa Rose 2006. It has a little sweetness that held up pretty well against the sweetness in the chicken marinade. The mild tannins did fight the spice a little, so not the best match overall.

7 more days til Carl gets home!

Unfortunately, I got hit with a GI bug today. So the new recipe is Ginger Tea, from About.com. It is supposed to be pretty good for settling upset stomachs, and I have to day it not only tasted good but seemed to help. About all else I ate this evening was some bread. Needless to say, I did not have wine this evening!

New recipe, April 26, 2011

8 more days til Carl gets back!

Tonight I made Korean Beef Stir-Fry, another offering from EatingWell.com. I know it is hard to see the beef (that is one of the beauties of the recipe!), but it is there, caressed by spinach, bean sprout, and a healthy dose of garlic, ginger, jalapeño, mirin and soy sauce. This is a lovely, spicey, energizing dish! I would do this again.

The wine was the 2009 Garnacha de Fuego. I picked it with the idea that this dish would pick up on the spicey and fruity character of the dish. That is largely true, but the subtle sweetness of the mirin (and maybe the spinach) did tend to make the wine taste a little more acidic than I expected. Ah well. EatingWell suggested a fruity Riesling, often a great match with spicey food, but I just couldn't resist trying something else. Ah well!

New recipe, April 25, 2011

Carl is off on another exciting trip--first he is taking a class at the Wharton Business School in my old haunt at the U of Penn, and then he heads to San Diego for the Annual Meeting of the National Council of Community Behavioral Health Centers. The only down side to this is that we aren't together!

This evening, I made a Warm Quinoa Salad with Edamame and Tarragon, from Eatingwell.com. After yesterday's lovely and extravagant meal, it was nice to have something a little lighter and still tasty. And this was quite nice!

I chose the Glass Mountain Chardonnay 2008 to match the tarragon and lemon juice in the salad, and it went quite well. I served the quinoa on arugula. The bitterness was a nice contrast by itself, but made the wine a bit bitter. Next time, I would choose a more neutral green to host this salad. But I would make it again!

New recipe, April 24,2011

Well, it's Easter, so dinner was a group effort among the Groshek and Burns clans. We had a lovely roasted leg of lamb, ham, and asparagus with brown butter and balsamic vinegar. Our contribution was Mashed Potatoes with Brown Butter and Scallions (which we have made before), and Roasted Radishes with Brown Butter and Lemon Juice, which was new. Roasted radishes have a much mellower flavor than raw, more like a turnip in some ways than a radish. It was a nice dish with the lamb.

We did have dessert too--an egg shaped cake with strawberry filling made by my niece Julia, and a wonderful flan made my my cousin Pete's wife Julie. It was all wonderful--it's a good thing it only comes once a year!

Tonight was another new cocktail night, as we joined Carl's friend Steve Dougherty at a celebration of his 60th birthday. Excellent wood fired pizza, and a really nice celebration! The cocktail we made when we got home is the Bangkok Margarita, from Epicurious.com. It has tequila, as any margarita should, set off by pineapple juice, ginger liquer, and a dash of salt, aleppo pepper and lime zest. It was nice enough--I would like to try it with fresh pineapple juice.

This evening we attended a Hush Nomad dinner. You make a reservation ahead of time, but you only find out where the dinner is occurring a day before your reservation. The chef was Ian Kleinman, who specializes in molecular gastronomy, so it was an entertaining menu, to say the least. The peanut butter poprocks and exploding whipped cream were perhaps the most entertaining items.

At any rate, since we ate out, tonight's new recipe was a cocktail, the Amazonia, from Epicurious.com. It has cachaça (a brazilian liquor), apple juice, lime juice and champagne. It was a nice way to end the evening.

New recipes April 21, 2011

Tonight's new recipe was a Mediterranean Supper Omelette with Fennel, Olives and Dill. This is another recipe from Epicurious.com. I think I overcooked the eggs a little--it was nice, but not my favorite dish. The wine was a Domaine de Pellehaut Harmonie de Gascogne 2009. The acidity was a reasonable match for the omelette, but overall it was not a spectacular match.

This evening Carl made a fabulous dish, Cuban Style Mojo Grilled Chicken with Greens Avocado and Mango, from Epicurious.com. Yum! As our guest, Sue Birch, said, "this may be the best salad I ever had." It was fantastic with the Villa Wolf Guwürztraminer 2009.

New recipe April 19, 2011

This evening the new recipe was Quinoa and Spring Vegetable Pilaf, from Epicurious.com. It was really very tasty. Since it had sauteed onions, leeks and mushrooms, I decided to pick a wine that would speak to those umami flavors, a Beaune 1er Cru Clos des Vignes Franches 2006, from Nicolas Potel. This is a very nice Burgundy, but when all is said and done, the green (peas and mint) flavors were dominant in the dish, so it was not a completely successful pairing. Ah well! Still a lovely dish--just would have been happier with a different wine!

New recipe April 18, 2011

We are continuing in vein of pairing food and wine. The September 30, 2010 Wine Spectator has 8 great pairings. Tonight we had Roasted Chicken and Bread Salad, from Judy Rodgers of Zuni Cafe in San Francisco. I love bread salad--this one was like a cross between a salad and a stuffing, and was, as the magazine said, a spectacular pairing with a Malbec. We had a 2006 Punto Final Malbec from Argentina, a luscious, jammy wine with lots of dark fruit flavors.

Suffice it to say, they got this right! The recipe has a number of steps, but it isn't complicated, and well worth the effort! Enjoy!

New recipes April 17, 2011



We have enjoyed learning about pairing wine and food. The September 30, 2010 edition of Wine Spectator focused on this. We decided to make, Alice Waters' Chez Panisse Baked Goat Cheese with Garden Salad, a dish she designed to match to Sauvignon Blanc. We had it with a 2008 Santa Alicia Reserve Maipo Sauvignon Blanc. The dish was wonderful (and easy, I might add), and went beautifully with the wine.

We also made Roasted Chili-Citrus Chicken Thighs with Mixed Olives and Potatoes from Epicurious.com. We decided this would pair well with the Terredora Dipaolo 2008 Aglianico. It worked beautifully. I am still trying to figure out what about the Aglianico works so well with citrus and olives--it has some pepper notes, good acidity, as well as dark fruit flavors. Whatever it is that works, it was a great match!

I have to start by saying that the snow at Mary Jane was much better than we dared expect. It wore me out!

Tonight we returned to Holly Arnold Kinney's wonderful book, Shinin' Times at the Fort. We made Gonzales Steak (a New York strip filled with chopped anaheim chilis and topped with brown butter) and Irish Champ (mashed potatoes with lots of butter, cream, and scallions), along with a mixed salad with Viandox Vinaigrette. It was delicious!

The wine worked beautifully with this--Forefront 2007 Cabernet Sauvignon.

New Recipe April 15, 2011

This dish looks different from most on this blog, because it is the components, instead of the finished dish. Carl surprised me with Spice Rubbed Chicken and Vegetable Tacos with Cilantro Slaw and Chipotle Cream. The recipe is from Epicurious.com. What can I say but yum? It is a fabulous combination of flavors. You don't hear "Taco" and "Elegant" in the same sentence very often, but it applies here!

We ate just before driving to Winter Park, so no wine tonight.

New recipe April 14, 2011

This evening's treat came from Epicurious.com: Asian Shrimp, Pineapple, and Peanut Salad. This was a delicious and spicy salad. Besides the named ingredients, it had shallots, mint, jalapeño, lime juice and fish sauce, so there were a lot of different flavors blending to make a great dish.

We did not have wine with the meal, because we ate before heading to the Denver Center for the Performing Arts to see Traces, a show with all the acrobatic artistry for Cirque du Soleil, but much more intimate. We thoroughly enjoyed it.

We also enjoyed a Domaine de Pellhaut Harmonie de Gascogne 2009 after the show.

New recipe April 13, 2011

Tonight I made Steak au Poivre, with a recipe from a fun book called Perfect Pairings: A Master Sommelier's Practical Advice for Partnering Wine with Food, by Evan Goldstein (with recipes by his mom, Joyce Goldstein). I couldn't find a link to this specific recipe, but the key to his sauce is a combination or brandy, white wine, Dijon mustard and Worcestershire Sauce. I served it with some roti chapati (you get the uncooked dough at Costco and finish it on the griddle--quite nice!) and a mixed salad with Viandox vinaigrette.

This recipe was intended to pair with a Bordeaux style Cabernet Sauvignon dominant blend, so we had it with a very nice 2005 Chateau Lafon-Rochet. Great pairing!

Tonight, Carl made a wonderful Moroccan Chicken with Tomatoes, Eggplant and Almonds, another Epicurious.com find. He served it over white rice. It has wonderful flavors, and is a complete meal.

We drank a Michel Langlois Coteaux Giennois 2005 with this. That might seem a little old for a white, but it is in excellent shape and had the roundness and fruitiness it needed to complement this dish. Yum!

The photo is of an old friend, Mark Krinock who was in Denver for a meeting and joined us for dinner. We had Tuna Kebabs with Ginger Chile Marinade, from Epicurious.com, with Basmati Rice and a mixed salad I made up with roasted asparagus, enoki mushrooms, sesame seeds and sea beans, with an asian vinaigrette.

It was quite nice, though I think I would either make the onion pieces smaller or start grilling them a little before the tuna to cook them a little more through.

This was nicely matched with a Graffigna Grande Reserve Malbec 2007, courtesy of Mark. Thanks!

New recipes April 10, 2011

Tonight we thoroughly enjoyed Beef Tenderloin with Morels and Tarragon Marsala Sauce, from Epicurious.com, with home created sauteed potatoes onions and peppers. This was fabulous! The salad was a mixed salad with a Dijon Tarragon Vinaigrette. The wine was a 2006 Chateau Doyac Bordeaux, which as an excellent match for the meal!!

This evening' recipes were Curry-Dusted Scallops on Green Pea Puree, and Black Radish Salad, both from Epicurious.com. Black radishes, if you didn't know, have a black skin but the flesh is white. So the color was not unexpected, but the radish flavor was mellow and delicious. Both recipes are from Epicurious.com.

The wine was the Vie di Romans Sauvignon Piere 2007, which was a great match to the food.

This evening, Carl was waiting for me to return from Madison, and enjoyed Rick Bayless' Guacamole with Toasted Almond and Apricot. When I got home, he served me a wonderful cocktail, the Blue Moon. Yum!

Today I got to have dinner with Carl before heading out to Madison Wisconsin for a meeting. We had Pan Seared Scallops on a Red Onion Marmalade with Peas, Black Pepper and Mint, both from Epicurious.com. Both were excellent.

No wine, since I was driving to the airport . . .

New recipes April 4, 2011


Tonight we had a Turkey Shrimp Dumpling in a Green Onion shiitake Broth, from Sunset Magazine. This was really nice! We used ground turkey instead of ground chicken (have you see ground chicken in your market?). We had this with a Lander-Jenkins Spirit Hawk Chardonnay 2009, which was a reasonable if not spectacular match.

After dinner, we enjoyed a Clementine Kicker from Restaurant Kelly Liken, thanks to my friend Susan Pharo. Instead of muddling fresh ginger, we used 1 ounce of ginger liqueur. Yum!

April 3, 2011 new recipes

Tonight we moved into spring! We had Sauteed Chicken and Radishes with Mustard and Tarragon, from Epicurious.com. If you, like me, have never cooked a radish before, here is a reason to do it! Sauteed, radishes gain and earthy sweetness, and lose some of their sharpness. This was an absolutely fabulous dish!

On the side, we had Asparagus and Grapefruit with Tarragon Creme Fraiche. We saw a recipe for something like this recently, but have not been able to find it. Carl made this up, and it was quite nice, and a good match with the chicken.

The not so good match was the 2007 Henri de Lanzac Chateau de Segries Lirac. It is a really nice wine, but is mostly Syrah, which just didn't make it with these dishes. A Pinot Noir might have been a good match with the chicken. We aren't sure what would be best with the Asparagus, except that the flavors in the dish are a pretty good match for the flavors in a Sauvignon Blanc--might be too much of the same thing, but might be a good match!

April 2, 2011 new recipes

This evening we worked together to get dinner together. The main dish was both simple and fabulous: Gwynneth Paltrow's Fried Zucchini Spaghetti, from Food and Wine. This is not a complex recipe, but the flavors are fabulous! We had it with Brussels Sprouts with Shallots and Wild Mushrooms from Epicurious.com. They worked together quite well!

The wine was Yealands New Zealand Sauvignon Blanc, 2008. It was a perfect match to both. A lovely evening!

April 1, 2011 new recipes

This evening Carl prepared a lovely Egg Drop Soup with Noodles from Epicurious.com, accompanied by a Tomato Scallion Salad Dressed with Homemade Shichimi Togarashi (Japanese 7 spice). It was delicious! Since we were driving up to Winter Park for a ski weekend, we did not have wine with dinner.












But Carl did make Midori Spritzers once we arrived in the mountains, a perfect end to the day!
