Huevos Rancheros from NYT Cooking. One of the lovely things about Mexican Cooking is the layering of many flavors. This is a particularly nice recipe, combining a fresh salsa with It's cooked counterpart, and black beans cooked with the salsa, and then of course eggs, Queso fresco and avocado. It has layers and layers of flavor and is very satisfying. This gets a 5!

Avocado Salad with Herbs and Capers from NYT Cooking. This is a fabulous way to dress up avicafo! Be careful with the capers, they bring a lot of saltiness to the dish. The creaminess of the avocado in this is fabulous. This gets a 5.

Chocolate Overnight Oats from NYT Cooking. The flavors are very good, but it is sweeter than our usual breakfast. We enjoyed it and would consider reducing or eliminating the maple syrup. Still gets a 4.
