New recipes April 17, 2011



We have enjoyed learning about pairing wine and food. The September 30, 2010 edition of Wine Spectator focused on this. We decided to make, Alice Waters' Chez Panisse Baked Goat Cheese with Garden Salad, a dish she designed to match to Sauvignon Blanc. We had it with a 2008 Santa Alicia Reserve Maipo Sauvignon Blanc. The dish was wonderful (and easy, I might add), and went beautifully with the wine.

We also made Roasted Chili-Citrus Chicken Thighs with Mixed Olives and Potatoes from Epicurious.com. We decided this would pair well with the Terredora Dipaolo 2008 Aglianico. It worked beautifully. I am still trying to figure out what about the Aglianico works so well with citrus and olives--it has some pepper notes, good acidity, as well as dark fruit flavors. Whatever it is that works, it was a great match!
