This evening I made a Grilled Brie, Prosciutto and Apricot Sandwich, from the Christian Science Monitor Food Blogs. Of course, I had to adjust the recipe a little--different bread, peach instead of apricot preserves, and a different more pungent soft cheese. But it was easy and fabulous! I had it with a mixed green salad with orange bell pepper, mango, avocado and a little smoked paprika.
The wine is a 2006 Las Rocas Garnacha, Viñas Viejas de San Alejandro, which turned out to be a great match with the sandwich.
