Tonight I wanted something quick and new, so I winged it. I liked baking a "grilled" cheese sandwich, so this one, on a baguette, had aged cheddar, capocollo, and some Vin Cotto. What is Vin Cotto? It is an unfermented must--ie the concentrated grape juice that could be fermented into something like balsamic vinegar. The sandwich was quite tasty! I had a simple green salad on the side, and the wine was the ever delicious 2009 Infinite Monkey Theorem Petit Sirah.
